Why Barrel Age a Cocktail?
You can age any aromatic cocktail, but some take to it better than others.
We generally start with a high proof spirit base so that the difference between the starting and finished product is profound and then age them for between a month and six weeks in the oak barrels you’ll see hanging on the wall beside the back bar.
Just like aging other spirits, you’ll see that the cocktail will generally darken in color, the strong and bitter flavor components will soften and the “heat” from the alcohol will mellow dramatically – another reason we often start with high proof spirits.
We often age our cocktails in carefully chosen kegs that had other cocktails previously aged in them. In this case, the flavors from the previous aging will add additional complexity and depth to the cocktail.
If you’ve never had a barrel aged cocktail it is truly something special. Each barrel only produces about five bottles, so you might want to hurry because they won’t last long.
